When you have some “sure winners” in your stable, it’s always wise to keep them as they are proven classics. Executive Chef Lam Hock Hin and his team understand this concept very well and that’s why every year, during the Mid-Autumn Festival, Hilton Kuala Lumpur’s favourite mooncakes make their appearance. Fans of their gorgeous Heavenly Gold, Flower Drum and Blue Moon wait for the 8th month of the lunar calendar so that they can savour these delicacies.
However this year, a new beauty joins the line-up: the Autumn Jade. This exquisite white snowskin mooncake encases a delectable filling of pandan and parmesan cheese with mandarin orange infused chocolate soft centre. It’s just like eating a chocolate bon bon! The confetti of flavours from the refreshing pandan, the citrussy orange, cheesy notes and rich chocolate may seem too overwhelming but somehow the combination works. The Autumn Jade certainly gives an interesting infusion of contemporary flavours to the palate.
Using only premium Musang King durians, the Heavenly Gold mooncake is highly sought in Chynna – it’s like eating fresh durians encased in a thin supple snowskin. One musang king durian can produce only 2 mooncakes, so just imagine how “precious & pure” those mooncakes are! The Heavenly Gold mooncakes have their own special golden boxes and are available in a “Premium Box of 4” for RM198+ and “Premium Box of 6” for RM276+.
Moving along the modern and contemporary flavours, the Blue Moon is one of the prettiest mooncakes around. In a light porcelain blue shade, the mooncake reveals a gorgeous filling of Amaretto Lotus Paste with Blueberry Cheese Feuillantine.
Next to it, the Flower Drum makes its appearance again this year. In a sweet lilac snowskin, the Flower Drum encases a smooth velvety lotus paste with a soft custard egg yolk in the centre. I love the light delicate flavours which blend well, giving a touch of modernity in the traditional lotus paste.
For the purists, Hilton Kuala Lumpur does offer several traditional baked mooncakes with well-liked fillings like white lotus paste, red bean paste, green tea paste, assorted nuts and others.
There are no preservatives added in Chynna’s mooncakes and they are made by hand daily. Their Dimsum Chef Chan Teck Woo tells me the team makes about 4,000-5,000 mooncakes on a busy day, to fulfil customers’ orders.
