Top of the list is the Matsusaka – widely known as Japan’s finest and most expensive steak. Its high fat content and unique luscious marbling are amazing – the meat’s rich flavor and extremely tender texture practically melts in the mouth.
Miyazaki is 100% pure-bred Wagyu from the “Japanese Black” cattle. It became very popular when it won 1st place in the twice-a-decade Japanese Wagyu Olympics for 3 consecutive times.
Nishiawa beef comes from various local Japanese farms and the first halal dedicated slaughter house in Tokushima. Guests who are new to Japanese beef can opt for the other general Wagyu cuts as introduction. They all have a generous amount of marbling and distinctive flavours.
Personally I think the exquisite flavours of these Japanese premium beef are best savoured when the steak is cooked to Medium/Medium Rare doneness. I love it shioyaki-style where just sea salt is sprinkled on the meat as this brings out the natural sweet flavours of the superb beef. Other flavours like teriyaki and misoyaki are favoured by some, although a little bit on the sweet side. Teppanyaki is another popular cooking style for diners as pepper, garlic and butter are used.
