A Thai Dining Takeover by Err by Bo.lan, led by Michelin-starred chefs Bo and Dylan from Bangkok featuring a partnership with PAPERKITE, a Malaysian Carft Beer brand.
Recently, the city has been all abuzz about the dining takeover of Err by Bo.lan in Grand Hyatt Kuala Lumpur. This collaboration with the team behind Err by Bo.lan, a celebrated Thai dining concept from Bangkok, is happening at the Poolhouse on Level 2 of the hotel until 30 November 2025. This collaboration brings the soul of Thai street food culture to the heart of Kuala Lumpur and showcases bold flavours and sustainable practices.

Originating from Bangkok, Err by Bo.lan is the brainchild of renowned chefs Bo Songvisava and Dylan Jones, founders of the one Michelin-starred Bo.lan. Known for their commitment to sustainability and deep respect for traditional Thai cuisines, Err reimagines everyday street food with premium quality ingredients and rustic flair.

Chef Duangporn Songivsava (Bo) is well-known for being passionate about good food and strives to create exceptional Thai cuisine. From their wide culinary experiences in Australia and the UK, both celebrity chefs Bo and Dylan partnered up to open Bo.lan in Bangkok in 2009. Both chefs draw inspiration and knowledge from an extensive collection of rare and antique Thai recipes, their travels across the country and time spent with local farmers and artisans.

The dining takeover also partners with PaperKite, Malaysia’s first Gold Award-winning craft beer, further enriching the experience with artisanal excellence. PaperKite is a Malaysian craft beer brand that started in 2022 with the philosophy of “Brewing for thirsty Malaysians who simply want better beer!”

PaperKite offers locally brewed beers that emphasize Malaysian culture and ingredients. It has won multiple awards at the World Beer Awards, including being the first Malaysian craft brewery to win a gold medal in 2023, and its beers are now featured in collaborations with venues like the Grand Hyatt Kuala Lumpur. The brand has a range of beers, including IPA, Oatmeal Stout and Witbier, all brewed by a Malaysian team.
Recently we were privy to an exclusive dining experience featuring specially-curated dishes by Chef Bo and Chef Dylan pairing with selected craft beers from PaperKite.
The 1st course featured Starters of Chicken Mousse Stuffed Chicken Cakes & Citrus Salad with Green Mango paired with the light Hoppy Lager. We liked the easy-to-drink refreshing lightness of the lager with its tropical citrussy aroma.

In the 2nd course, we had crunchy Deep Fried Squids and tender juicy Fried Beef Short Ribs. These went so well with the easy-going Pale Ale with delightful floral, grapefruit and peach aromas from the Citra hops. The smooth mouthfeel of this ale made this my personal favourite beer for the evening.

We were served Grilled Lamb Chops and Stir-fried Cabbage with Bolan fish sauce next paired with Copper Ale. This copper coloured beer features a malt-forward bitter profile with low hop flavours balanced with hints of caramel and light smokey roast – just nice for robust red meats.

The final course was a collage of Thai dishes with fragrant jasmine rice. Our table was laden with Mountain Jungle Curry (with braised and grilled beef), River Prawns with Salt & Chilli and Deep-fried Egg Salad. A classic hoppy IPA was paired with our plates of a typical Thai meal. Between mouthfuls of the spiced curry and chilli prawns, the IPA with tropical citrussy aromas tasted smooth even with its pronounced hoppy bite.

The Err by Bo.lan Thai Dining Takeover is available for both lunch and dinner, with à la carte prices starting from MYR 28 per dish and with vegetarian options available. PaperKite craft beers are served at the PoolHouse.
