Back when I was growing up in Ipoh, some of the best dining memories I have are those of eating dim sum at night. Supper is a popular pastime in my hometown – back then, nobody has ever heard of “supper is bad for you” and even if any one had heard about it, nobody cared. So, on those happy occasions when we could afford it, I remember one of our favourite night dim sum jaunts was located near the wet market. Trays and baskets of the freshest dim sum sometimes never quite made it to the tables – they were grabbed as soon as they were ready!
Here in the Klang Valley, dim sum is very much a breakfast and lunch thing. People here hardly go for dim sum at night. Well, all that is changing now – now that Chynna at Hilton Kuala Lumpur has started offering dim sum for dinner. And not just any dim sum but premium ones! They are made with ingredients like scallops, wagyu beef, bird’s nest, lobster, truffles, caviar and the likes. Ingredients such as these call for some innovation in the execution and the chefs at Chynna have clearly put together their creative hats and came up with new twists to some old favourites.
Start off by wetting the palate with some tummy-warming soups like the Salmon Trout Consomme and Braised Green Peas Soup which can be perfectly paired with some crispy deep-fried shrimp dumplings.

If you fancy the healthier steamed dumplings, there are the pretty and delicate-looking Steamed Nanyang Chilli Paste Coral Trout Dumpling and the Steamed Shrimp and Bird’s Nest Dumpling. The flavours are lighter but not any less tasty.

There are more eye-catching dim sum on the menu: Carrot Juice Rolls stuffed with Vietnamese Rice and Fresh Scallops, the super crunchy Deep-fried Beancurd Roll with Wagyu Beef & Cheddar Cheese and the hearty Charcoal Paos stuffed with chicken cha siu.

Knowing that most of their guests love to end their meals on a sweet note, the chefs have included the Oven-baked Musang King Tartlet and Chilled Aloe Vera with Hawthorn Jelly. I found the musang king content to be a bit diluted as custard cream has been added to the tart filling.
