Neroteca, that rustic casual Italian deli in Bukit Ceylon now has a new Executive Chef. The talented Executive Chef Massimo Zampar stired up quite a bit of excitement when he demonstrated his culinary skills with a live cooking demonstration in an exclusive preview recently.
Serving up an exquisite Mushroom Risotto – Carnaroli Risotto with Taleggio Cheese, Forest Mushrooms & Truffle Oil in an effortless manner, he showcased his prowess in style. As he saute’ed and stirred the risotto, the whole deli was filled with a mouth-watering aroma of butter, olive oil, garlic, onions, mushrooms, white wine and cheese! And truffle oil too! The wait to taste the risotto was getting quite unbearable, what with all that aroma floating around!
Born in Palmanova, Italy, one of Chef Zampar’s career highlights included his training under the tutelage of Chef Giovanni Ciresa at Bauer Hotel, Venice, Italy, where Prince Charles of Wales and Camilla Parker Bowles, the Duchess of Cornwall were often guests at the hotel. In 2006 in Spazzio Italian Restaurant, Hyatt Regency Istanbul, he worked as Chef de Cuisine, in which Felipe Massa, the Ferrari team driver was a regular guest.
With specialised culinary skills in preparing the finest in Italian Cuisine, his experience and expertise came through in using fresh ingredients, fine quality herbs, cheeses and meats, specially bought and flown in from Italy. With Chef Zampar on board now, we can look forward to a more diversified menu in Neroteca, which I am sure, will showcase his own creative twists in serving up authentic Italian cuisine.
Besides his just-cooked Mushroom Risotto, guests were treated to an array of delicious Italian-styled canapés while drinking endless glasses of prosecco. From the platter of canapés served, my favourite was surely the chef’s signature roasted pork ribs. They were served in dainty pieces in mini bowls. Neroteca has an open kitchen concept whereby you can see the chefs in action by just standing near the bar counter. I was observing their frenzied pace in the kitchen and when they saw me, they piled a whole plate with those awesome ribs for me, much to the envy of some of the guests. I was actually stopped by someone who asked where I got those ribs, haha! As I was using my fingers to eat those, I didn’t have a chance to snap some photos. I promise I will do that the next time I dine in Neroteca because I have a feeling that I will be visiting that place again soon – ahhh… those ribs are beckoning!
