A whole duck is deep-fried and stuffed with goodies before being steamed till tender. The stuffing is made from diced duck breastmeat, gingko nuts, mushrooms, carrots, water chestnuts and roasted pork (siu yook).
I like how the duck is steamed till it’s delightfully tender (about 2-2.5 hours, according to Chef Lew aka Chef Sailormoon) yet it’s not the usual mushed-up softness that most Chinese restaurants tend to prefer. The tender duck here still yields a bite and when eaten dunked with the delicious gravy, I must say Chef Sailormoon has done an exquisite job with the fowl.
If duck is not your favourite bird, BTW also has a Roast Chicken with Stuffing as an alternative.
It’s Roast Chicken a’la Chinese style, with thin golden crispy skin (a result of air-drying the chicken thoroughly before roasting it) but what sets this particular roast chicken a notch above others is the delicious stuffing of potatoes and cheese in it. The potatoes were soft yet retain some creamy chunkiness in it and well flavoured with cheese and a sprinkling of pepper. It’s a perfectly roasted chicken as the meat was done just nice – smooth, tender and juicy.

I always like the stuff duck. Some called it the eight treasure duck. RM 75 for it is not expensive considering the hard work needed to create it. The chicken looks really crispy and delicious. It is bad timing to read it now as I am yet to have my lunch.
