If you are a lamb lover, you should head over to Las Carettas Mexican Restaurants before the end of this month. Why? For the simple reason that for this entire month, you will get to taste some real lips-smacking lamb shoulder racks that are rarely served the way it’s done in Las Carettas.
Start off your meal with a Las Carettas signature Margarita
Owner and Chef Victor Siow has led his team in coming up with Pan-seared Lamb Shoulder Racks that are deliciously tender and juicy. Now, if you know your lamb well, you’d know that lamb shoulder racks are secondary cuts, meaning they are generally tougher than the loin cuts and are seldom served this way. With some research and experimenting, Chef Siow has perfected his sous vide and pan searing techniques to come up with lamb shoulder racks that are meltingly tender with pinkish insides. The outer layer has a gentle crisp on it, sealing in the tender meat and juices.
Two pieces of lamb shoulder racks (290g) are propped up delicately on a cushion-like homemade mushroom flavoured risotto cake flanked by pretty cubes of yellow and green zucchini. You get to pick your sauce too: either the freshly-made ginger and thyme sauce or the light blue cheese sauce. All these for RM69.00++. Please allow 30 minutes for cooking time as Chef Siow ensures that the dish is perfectly executed.

Nachos with Minced Beef
At Las Carettas, you can’t go wrong with their Nachos – crisp tortilla chips gratinated with jalapenos, bell pepper relish, enchilada sauce and loads of cheese. It’s RM19.50 for the plain nachos but opt for the minced beef or shredded chicken toppings (RM22.90) – they are seriously addictive.

One of my all-time favourite appetizers is their Black Mussels (RM25.90) lightly simmered in its own broth, flavored with fresh coriander and has that extra kick from some fiery habaneros. Tortillas are thoughtfully served with this – they come in useful for mopping up that divine spicy broth.
If mussels are not your scene, the Camarones al Ajillo (RM29.90) is another option. Lightly sautéed shrimps tossed with sliced black olives, capsicums, jalapenos, chopped garlic, tomatoes and fresh cilantro. Slurp up the tasty broth or simply dunk the 2 slices of toasted French baguette into it for a more filling episode.
