Together with his culinary team, Chef Budiman is all set to showcase a tantalising array of traditional dishes during this holy month. The dishes served are inspired by his team members’ hometown favourites.
A good place to start would be the Malay salads at the Malay Kerabu station where there’s smoked duck salad, lemongrass and green Jamaica plums, mussels salads with beansprouts, roasted coconuts and more. To titillate the palate even more, there’s a good selection of savouries, pickles and sambals made with various forms of fish and meat.
We couldn’t get enough of the festive favourites like chicken biryani, buffalo curry, bubur lambuk and braised lamb with Arabic spices. More lamb dishes come in the form of kebabs and roasted whole lamb served with garlic mayo, cheddar cheese and sour cream.
This year, Chef Budiman has created another signature noodles dish, quaintly known as “Lala Noodles”. The broth was very umami, slightly spicy and the noodles were topped with lala (clams), prawns, tofu and boiled egg. The noodles were excellent when eaten with a squeeze of calamansi and a dollop of sambal.
Besides the traditional Malay festive dishes, Latest Recipe’s Indian, Japanese, Western and Chinese counters continue to tempt diners with their mouth-watering fares. We love the Indian breads, curries and chutneys and balancing stomach capacity with the incredibly popular sashimi and teppanyaki at the Japanese station.
This year, a figure of attraction at the desserts station is the Turkish ice-cream man serving 3 unique flavours of the frozen “dondurma” treats. Two special desserts which I never skip at Latest Recipe are their freshly-made waffles with maple syrup and pancake rolls with the most delectable “bubur durian”! There’s a huge variety of local kuih-muih, elegant western sweets like coffee profiteroles, pistachio creme dacquoise, chocolate madeleines, green tea tiramisu and a gorgeous swirling chocolate fountain.
