There are several reasons why I love Vietnamese food. Their flavours are clear and distinctive, mostly from fresh ingredients and cooked with very little dairy or oil. The abundant use of fresh herbs and raw vegetables is refreshing – I absolutely adore the Vietnamese mint, coriander leaves, Thai basil, lemongrass, lime and bird’s eye chillies served liberally with almost every dish.
