There’s no denying that Chef Pierre is a marvellous chef and his passion is clear for all to see when he dishes up the most delicious authentic French fare from his neat kitchen in Croisette Cafe. The sweets and pastries he tirelessly bakes are works of art – I always think they are too pretty to eat.
So, with Christmas just round the corner, the jovial chef has been quite busy preparing for the feasting that’s bound to happen. If you are expecting an extensive festive meal with lots of selections, then you’d best go for the hotel buffets. At Croisette Cafe, Chef Pierre believes in keeping the menu tight with special authentic dishes personally created by him.
So… here’s the menu that will be served at Croisette Cafe on 24 December 2014 from 7pm to 10.30pm and on 25 December 2014 from 11am till 3pm:

Starter
Scallops (pan-fried on a spicy nest of leeks fondue)
Mains
Pork Loin on a bed of young vegetables, wholegrain mustard & sage sauce, potato paysanne and mesclun salad
or
Duck Breast pan-braised with raspberry sauce, potato paysanne and mesclun salad
or
Slab of Seabass with sauce Duglere, celeriac puree & tian vegetables
Dessert
Christmas platter of assorted fruit tartlets, vanilla mille feuilles, mini opera, Earl Grey cream and fresh raspberry coulis
The above menu is priced at RM118net per person and reservation is a must, especially if you wish to have the Seabass as mains.

Croisette Cafe has also come up with a takeaway menu for those of you who wish to celebrate at home. Chef Pierre has thought of everything – right from Soups/Starters to special condiments like pistou ( a Provencal cold sauce rather similar to pesto but without pine nuts), tapenade and semi-dried tomatoes in olive oil – all these made and bottled in Croisette Cafe.
The roasted meats are always at the centre of a festive meal and we had a sneak preview of what’s in store, coming from Chef Pierre’s kitchen. There won’t be any turkey this year. Instead, Chef Pierre will be roasting capons. Personally, I much prefer these huge chickens to turkeys, for the amazing natural flavour and succulent texture. Beneath the gorgeous golden yellow skin, the meat was moist and flavoursome. Each capon weighs in at around 3kg and is priced at RM95/kg.

To please meat lovers, there are also roast pork loin, Australian beef striploin and lamb leg to take away. The pork loin was lean, like most loin cuts are but I was pleasantly surprised by the tender and juicy slices.

Lazy to make your own salad? Worry not. There is a Caesar Salad with streaky pork bacon all ready for you to take home.
We couldn’t resist the desserts whipped up by the chef. The Bavarois Mango (or raspberry), Trio Chocolate Cake and Passion Indulgence Cake were very appealing and will definitely add a touch of class to your festive table.
