I’m a great fan of Indonesian Layer Cake.
Yes… it’s an extremely sinfully fattening cake that will shoot your cholesterol level sky high because it contains lots and lots of egg yolks. The proportion of egg yolks in the recipe makes up at least 70-80% of its entire content! These cakes are not cheap… mainly due to the fact that it’s very labour-intensive as they are baked layer by layer.
Anyway, the best cakes still come from Indonesia, of course (duhh) although we can get similar ones here (from bakeries or supermarkets). Somehow the spices they use there are more fragrant and they have mastered the technique as their cakes are always very moist, spongy and richly well-flavoured.
There are many good Indon bakeries that sell fantastic layer cakes. So far, I have tasted great ones from Kartika Sari, like this Prune Layer Cake…
