Fans of Vietnamese cuisine will be happy to know that Latest Recipe @ the Le Meridien Kuala Lumpur will be showcasing the culinary prowess of Chef Bui Qui Kim from Hanoi from 11-18 April 2016.

Chef Kim is the Senior Sous Chef from Sheraton Hanoi and she is here in the Le Meridien Kuala Lumpur to share traditional northern Vietnamese dishes with guests.

Without doubt, Pho – flat rice noodles in delicious beef broth is one of the main attractions in any Vietnamese food showcase. This heartwarming dish is eaten by Vietnamese on a daily basis. Pho actually originated from North Vietnam in the 20th century in the Nam Dinh Province of Hanoi.
While pho is popular all across Vietnam and is basically rice noodles in beef broth, there are inherent differences in tastes depending on the region. From my personal experience, I found the beef broth of pho in southern Vietnam to be sweeter while that from Hanoi (northern Vietnam) is more sourish (addition of vinegar) and more garlicky.
From now until 18 April 2016, the sumptuous buffet spread at Latest Recipe will feature many of Chef Kim’s specialities. The Vietnamese dishes will be rotated every 2 days, based on 3 different menus. We checked out some of the dishes in menu 1 and had a grand time trying to sample most of it, if not everything! (which was quite impossible). We just zoomed in to our favourites which included the pho of course, followed by deep-fried Vietnamese seafood springrolls, glass noodles salad, braised beef knuckle with pickled onions and stir-fried crabs in chilli sauce.

Deep-fried Chicken Wings with Lemongrass
Not to be missed are the BBQ duck with honey sauce, deep-fried chicken wings with lemongrass, Vietnamese braised beef with cinnamon and prawn paste wrapped around sugar cane. An absolute must-try is the Vietnamese Pan Cake which is made on-the-spot, with savoury fillings of chopped vegetables and meat.

Desserts are varied, ranging from our favourite coconut caramel custard to sticky rice dumplings in green bean syrup and assorted Vietnamese fruit candies.
